Who can forget the basement bar/disco/quick bites dungeon called the 1571, named after the year when explorer Miguel Lopez de Legazpi established a settlement in what was to be called the City of Manila?

The Burger ProjectI've recently been cruising around the Katipunan and Sikatuna areas and have noticed a great proliferation of diners all laying claim to having great burgers. Coffee with Rock Salt and Cheese; Green Tea with Rock Salt and CheeseOnce upon a time, when the British ruled over Hong Kong, afternoon tea parties were practiced in the Chinese community. The black teas then were served with milk and sugar and pastries on the side.

But they decided to use the local tea leaves and introduced new innovations such as using silk screen for the panty hose milk tea and adding evaporated milk, instead of milk and sugar, for a silkier and smoother finish.

Hainanese Chicken Rice with Nyonya Pai Tee in the backgroundAt the recent opening of The Chicken Rice Shop (TCRS) at Robinson’s Place in Manila, Ms. Gaik Wong, Managing Director of TCRS was both excited and nostalgic.  It seems like only yesterday when her daughter, after graduating with an accounting degree from an Australian university, decided to go into the food business.  Ms. Gaik was quite open to the idea, as she herself had extensive experience in the food and beverage industry, having served as Executive Director and COO of a leading fastfood chain in Malaysia for 30 years. She recalls: “I said, why not? After all, I had the background and the business network.  Plus, we had grandma’s secret recipe for authentic Hainanese chicken rice.”
